Sourcing
We begin by understanding a honey and the information available about where and how it is produced. Sourcing is a question we ask carefully, not a box we tick.

Selection
Only honey that meets our expectations for character and quality is considered. Selection is deliberate, and sometimes means saying no.

Evaluation
We assess flavour, aroma, sweetness balance, texture and overall character. Where further evaluation is undertaken, we will say so — and only then.

Laboratory testing
Every batch will be laboratory tested before release — including moisture content, HMF and diastase activity — and the results will be published alongside the batch.

Documentation
Decisions are recorded and supported by the documentation available to us, so that what we say can be traced back to what we know.

Batch transparency
Each release will carry its own batch information. Details will be published with the relevant batch.
